PROJECT

Wild Yeast

A scientific study in which we investigate the diversity of yeasts found on local fruit trees.

Check out this video we made in spring 2021 for a quick introduction to the project:

What are yeasts?

Why is it important to study yeast biodiversity?

Our study

The aim of this project is to isolate, culture and study yeasts from local fruit trees. In a first step we will establish procedures for environmental sample collection and storage. From these samples we will attempt to isolate yeast strains which will then be subjected to three types of analysis: (1) identification to genus/species level using molecular biology techniques, (2) optimisation of culture conditions and (3) determination of fermentation characteristics such as alcohol yield and tolerance.
