The aim of this project is to isolate, culture and study yeasts from local fruit trees. In a first step we will establish procedures for environmental sample collection and storage. From these samples we will attempt to isolate yeast strains which will then be subjected to three types of analysis: (1) identification to genus/species level using molecular biology techniques, (2) optimisation of culture conditions and (3) determination of fermentation characteristics such as alcohol yield and tolerance.
